Directions

  • 1 Heat oven to 350°F. In 8-inch skillet, cook beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently; drain. Stir in 1/2 cup of the pasta sauce. Remove from heat.
  • 2 In bottom of ungreased 8-inch square (2-quart) glass baking dish, spread 3 tablespoons of the remaining pasta sauce. In medium bowl, beat egg white. Stir in ricotta cheese, Parmesan cheese, oregano and 1/2 cup of the mozzarella cheese.
  • 3 Spread 1/4 each of ricotta mixture, spinach leaves and beef mixture over each lasagna noodle. Starting with short side, gently and loosely roll each noodle; place seam side down over sauce in baking dish. Top roll-ups with remaining sauce. Cover with foil.
  • 4 Bake 30 to 40 minutes or until bubbly and thoroughly heated. Remove foil; sprinkle with remaining 1/4 cup mozzarella cheese. Bake an additional 2 to 4 minutes or until cheese is melted. Let stand 5 minutes before serving.

I used whole wheat noodles and boiled them until just soft enough so I could roll them up. Never had whole wheat noodles so was nervous but couldn't tell the difference all was put together.

I made these for the first time last night. I have never cooked lasagna before so was a little intimidated. Served with a side of garlicky asparagus. My husband couldn't stop praising me. It was so sweet. He kept saying "wow honey you've outdone yourself," "10 out of 10!" He then called my MIL who is a phenomenal cook to brag me up. Very easy and super yummy. Any beginner can do this!

Perfection for 2 people! Super easy, tasty and quick!! I used regular lasagna noodles because I couldn't find the noodles listed in the recipe. Love this recipe!

Loved these, very easy to make. I just used boxed lasagna noodles, boiled them and followed the rest of the recipe. Also I put spinach in some and not the others for those picky eaters in the house. Great Recipe!!

I didn't have the ricotta cheese so just mixed the egg with mozzerella cheese and seasonings. Couldn't find the noodles so used the regular lasagna noodles. Great recipe!!! Loved it.
