Ingredients

  • 1 package (20 oz) boneless skinless chicken thighs
  • 2 cups chopped onions
  • 1 medium stalk celery, chopped (1/2 cup)
  • 2 medium carrots, chopped (1 cup)
  • 4 teaspoons curry powder
  • 1 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon lemon juice
  • 1 carton (32 oz) Progresso™ chicken broth (4 cups)
  • 1 1/2 cups frozen mixed vegetables, thawed, drained
  • 1/3 cup uncooked instant white rice
  • 1/2 teaspoon salt, if desired

    Spray 3 1/2- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except mixed vegetables, rice and salt.

    Cover; cook on Low heat setting 6 to 8 hours.

    Break chicken into bite-size pieces by pulling apart with 2 forks. Stir in mixed vegetables and rice. Increase heat setting to High. Cover; cook 20 minutes longer or until rice is tender. Season with 1/2 teaspoon salt.
