Ingredients

  • 3 tablespoons butter or margarine
  • 1 3/4 cups uncooked converted long-grain rice
  • 3 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1/4 teaspoon salt
  • 6 medium green onions, chopped (6 tablespoons)
  • 1 teaspoon dried basil leaves
  • 1/3 cup pine nuts, toasted

Instructions

    Spray 4-quart slow cooker with cooking spray. In 10-inch skillet, melt butter over medium-high heat. Cook rice in butter 4 minutes, stirring frequently, until golden brown. In slow cooker, stir together rice, broth, salt, onions and basil.

    Cover; cook on High heat setting 2 hours or until liquid is absorbed and rice is tender. Stir in pine nuts.
