How to Roast Potatoes

Knowing how to roast potatoes to get their crispy edges and tender insides, is just a few of our terrific tips away. For the best roast potatoes, use these helpful pointers:
Cut Same Size Potatoes: Cut your potatoes all about the same size, so that they can all cook in the same amount of time. You can also make mini roasted potatoes with mini-size potatoes that can be roasted whole—just make sure they’re all about the same size!

Use the Right Pan: Stick to just 1 1/2 pounds of potatoes and use the pan size called for. To get their crispy crust, they need to have a little room around them, so the steam can evaporate, allowing the potato edges to crisp up, rather than steam.

Let Them Hog the Oven: for the best results, let the potatoes cook by themselves in the oven, rather than cooking them with another dish, such as the main dish you’re going to serve them with. The steam from other food can make it harder for the potatoes to get crispy. If you have two ovens, roast the potatoes in one and the main dish in the other. Or you can make your main dish on the stove top or grill, air-fryer or slow cooker, giving the potatoes just the right baking conditions to bake up crispy. The Best Potatoes for Roasted Potatoes


Roasting/Boiling Potatoes: The best potatoes for roasted potatoes are roasting/broiling potatoes such as fingerling, new and red potatoes. These potatoes have waxy, creamy interiors that hold their shape well when roasted or boiled.

All-Purpose Potatoes: Purple potatoes or yellow potatoes, such as Yellow Finn or Yukon Gold can also be used. Their texture is a little softer than roasting/boiling potatoes, however they can still be used for roasting potatoes, if you like.

Go Small for Consistency: We like to call for small red potatoes, so it’s easier and faster to cut them and end up with potatoes all the same size. The red skins also are pretty on the roasted potatoes. Feel free to use any other varieties if you cut them into 3/4-inch chunks.

To Store Potatoes: Keep them away from other veggies, as they can absorb flavors. Store them in a cool place (45°F to 60°F), that is also dry, dark, and well ventilated. Any of the roasting/boiling potatoes can be stored for up to 2 weeks. All-purpose potatoes can be stored for up to 1 month.

Line the Pan: Use a spatula with an angled edge to lift and flip the spuds, when they are crispy-golden brown on the bottoms. Or you can line your pan with either cooking parchment paper or foil, to help in flipping the potatoes without leaving any of the crispy goodness on the bottom of the pan. It also helps with clean up!

Check the Bottoms: The potatoes will brown on the bottoms before they brown on the tops, so check the bottoms for a nice golden-brown appearance before you stir them. Use a cookie spatula or spatula turner that has an angled edge to stir the potatoes, rather than tongs or a spoon which could cause the potatoes to fall apart.

How to store Oven-Roasted Potatoes?

We doubt there will be any leftover spuds on the table when dinner is done, but if there are, they make very tasty leftovers! They will not be as crispy as when eaten freshly roasted, but they will be just as delicious, because that roast potato seasoning still shines with great flavor. It will be less pronounced with time, so enjoy them with lunch the next day or as a quick side in the next few days, when you are throwing dinner together on a busy night.
Refrigerator Storage: Just place the cooled potatoes in an airtight food storage container and store in the refrigerator for up to 3 or 4 days.

Reheating: You can reheat them in on a microwavable plate, covered very loosely with plastic wrap on Medium-High (70%).

Freezing: We do not recommend freezing oven-roasted potatoes, as they will not stay crispy but can become mushy instead.

What’s the best roast potato seasonings?

We cannot get over how dried rosemary, salt, and pepper blend with oil to make such a flavorful spud dish. And best of all—those ingredients are in the cupboard, already! You can switch up the seasonings and make a terrific flavor change with other simple ingredients. Try any of these combinations:
Garlic-Rosemary Potatoes: Add 1 minced garlic clove with the rosemary.

Taco-Seasoned Potatoes: Substitute 2 teaspoons Old El Paso™ taco seasoning for the rosemary, salt, and pepper.

Chili-Roasted Potatoes: Substitute 1 teaspoon chili powder for the dried rosemary and 1/4 to 1/2 teaspoon ground cumin for the pepper.

Smoky Potatoes: Substitute 1 teaspoon smoked paprika for the rosemary and 1/4 to 1/2 teaspoon ground cumin for the pepper.

Italian Potatoes: Substitute 1 teaspoon Italian seasoning for the dried rosemary.

Thyme Potatoes: Substitute 1 teaspoon dried thyme leaves for the dried rosemary.

Roasting at a Higher Temperature: The potato edges and tips can burn before the insides are tender.

Roasting at a Lower Temperature: The potatoes steam, rather than have their moisture evaporate with high heat, resulting in softer potatoes.

Bigger Potato Pieces: They can get too crispy/burned on the outsides before the interiors are tender.

Smaller Potato Pieces: They can get dried out because the insides will get done before the exteriors have a chance to brown.

  • 1 1/2 lb small red potatoes, cut into fourths (3/4-inch chunks)
  • 2 tablespoons vegetable or olive oil
  • 1 teaspoon dried rosemary leaves, crushed
